Tasty Tuesdays: Rhubarb Pizza with Goat Cheese


 There was a great little pizza place in Cambridge that I just loved. The pizza's had unique and delicious (albeit sometimes weird) sauces and toppings, and they had the best GF crust I have ever had. Basically every GF pizza I've had since is compared to the pizza from Zing's. I haven't found a place that compares and I still miss it. Shortly after moving, Zing's actually closed it's doors so I can't even get a fix when I go back to visit.


This pizza is probably the closest I've ever come to replicating the essence of a Zing pizza. It's sweet and savory and has so much flavor. In the future I would add some caramelized onions or chicken to if if I wanted to make it a dinner pizza but this is perfect for lunch.

I used the Pillsbury GF Pizza crust again and this time I didn't over cook it. And this time is was perfect. It's definitely a thin crust but I like my pizza this way. It's also a personal size pizza, basically, if you used half the dough. Since I had already used half for my tomato pie, there was a sauce to crust ratio issue so I used a couple of tortillas to make really thin crust pizza as well.


The recipe I used can be found here. I like using what I have on hand so I used a little less rhubarb, water instead of cranberry juice and crumbled goat cheese with a sprinkle of chili powder on the top after it came out of the oven. The only thing I wouldn't recommend changing is the fresh basil on top. It is AMAZING with the balsamic rhubarb sauce. I honestly could have eaten everything I made but then Nate would have been super disappointed. Even Will got in on the pizza loving action. He is definitely not a plain food type of kid.

Next time you're in the mood for pizza, you should definitely give this a try (and seriously, when are you not in the mood for pizza?). You can even buy frozen rhubarb so don't let that be an excuse!
