Mango Salad with Cashews

It's peach and mango season in Fl right now and they are pretty spectacular. With the muggy heat, nothing tastes better than a piece of ripe juicy fruit. The only problem with mangos is that I always buy way more than I can realistically consume before they go from perfectly ripe to a mushy mess. This recipe is great since you can scale it up or down depending on how many mangos you convinced yourself to buy.


  • 2 ripe mangos, peeled and cut into small bite size pieces
  • 3 small fresh green chilies, finely chopped (you control how spicy by seeding or not... I left half of one chili unseeded)
  • 1 small yellow onion, finely chopped
  • 1 tsp sugar
  • 1 garlic clove, finely chopped
  • 2 tb lemon juice
  • 1/2 tsp salt
  • 2 tb whole roasted cashews
Now for the hard part..toss everything together and enjoy! This salad is sweet and savory and the chilies give just a little kick. We had this as a side dish but I would eat it as a snack or even a light meal.
