Gluten Free Sugar Cookies

This is a little weird of a recipe but it comes out surprisingly well. We spent Christmas afternoon making cookies and I came across this recipe on the Betty Crocker website and decided to give it a try.


Ingredients

  • 1 Box Betty Crocker Gluten Free Yellow Cake Mix
  • 1/2 cup butter, softened
  • 1 teaspoon vanilla (make sure it is gluten free)
  • 1 egg
  • colored sugar or frosting
Heat oven to 350 degrees. In a large bowl, mix the first 4 ingredients until dough forms (it will be sticky). On an ungreased cookie sheet, place teaspoon size balls of dough. If you are using sugar, flatten the cookies with a flat bottom glass coated in sugar. If you are using frosting, don't flatten. Bake 9-11 minutes or until the cookies have set. Let cool 2 minutes and then transfer to cooling racks. Once cool, coat the cookies with frosting. 

Notes: To make the dough easier to deal with, I refrigerated it for about a half a hour before placing on cookie sheets.
