Stuffed Peppers

You can stuff peppers with a lot of different ingredients, and over the years I have tried a lot of combinations. This particular combination is one of my favorites.


Ingredients
  • 4 Bell Peppers (I used green but you can really use any kind) with the tops cut off and the seeds washed out
  • 2 cups of rice
  • 1 lb ground beef
  • 1 small onion, chopped
  • 1 clove garlic, minced
  • 1 package of sliced mushrooms (optional)
  • olive oil
  • salt and pepper
  • 1/2 cup shredded cheddar cheese
Cook the rice. While it is cooking, heat a small amount of oil (less than a tablespoon) in a saute pan. Add the garlic and onion and cook until lightly browned. Add the meat and saute until almost cooked. Add the mushrooms and continue cooking until the meat is cooked. Add the cheese and rice and stir until mixed. Stuff the mixture into the peppers and replace the tops. Cook for 30 min at 350 degrees Fahrenheit. Let cool about 5 minutes and Enjoy!

  1. I love stuffed peppers too. Do you cook your peppers before you bake them in the oven? I used to steam or boil them, but now just nuke 'em in the microwave to get them a little soft.

  2. I don't. After 30 min in the oven they are usually soft enough for me and I like to have a little crisp left in them.
