Gluten Free Cranberry Orange Cheesecake

I love dessert and so if I'm making food for an event, I almost always make a gluten free dessert. This one is great for Thanksgiving and was a big hit at our party.



Ingredients:

Crust:

  • 1 1/2 cups gluten free ground graham crackers
  • 1/3 cup sugar
  • 1 tbsp orange peel
  • 4 tbsp melted butter
Mix all ingredients until well blended and press into a 8 or 9 inch pie pan. Bake at 375˚ F for 7 minutes. Let cool before adding filling.

Filling

  • 2 packages 1/3 fat cream cheese
  • 1 cup low fat sour cream
  • 1 bag fresh Cranberries, washed and picked over for bad ones
  • clementine 
  • 3/4 cup sugar
  • 1 tsp gluten free vanilla
  • 4 tbsp gluten free flour
  • 3 eggs
 In a food processor, add 2 room temperature packages of cream cheese along with 1 cup sour cream, 1/2 a bag of fresh cranberries, the whole clementine quartered,  3/4 cups sugar, vanilla and flour. Blend until the cranberries and orange are smooth, then add eggs and blend until all is incorporated. Pour the filling into your pie crust and top with the rest of the cranberries. Bake at 325˚ F for 30 min or until the center is set but sill wiggles a bit. Turn off oven and let the cheese cake sit in it for another hour. Let cool to room temperature and then chill in the refrigerator for at least 1 hour. Slice and Enjoy!
