Brown Rice Quiche

I love eggs. So much so, when I was abroad I basically ate nothing but eggs. I however, haven't really ever liked quiche. This is mostly due to the crust which, now, I can't eat. So when I found a quiche recipe on Pinterest with a brown rice crust, I had to try it (you can find the original recipe here)


Ingredients: Makes two pie size quiches

  • 3 cups cooked brown rice
  • 1.5 cups shredded cheddar cheese
  • 6 eggs
  • 2 cups broccoli chopped finely
  • 1 cup milk
  • 1/2 cup diced turkey
  • Salt to taste
  • Paprika to taste
Mix the rice with two eggs and 1/2 cup cheese. Press into 2 greased pie plates and bake in a 450 degree preheated oven for 3-5 minutes. Mix the remaining ingredients in a bowl and pour onto the crusts. Bake at 375 degrees for an additional 30-35 minutes and then let set before cutting. Enjoy!

Notes: This did not win any favors with our friends 4 year old. Apparently the idea of an "egg pizza" didn't really convince her but everyone else seemed to enjoy it so I would call it a success. The eggs were nice and fluffy and the crust was crispy.
