Gluten Free Sweet Potato Gnocchi


I modified this recipe from the blog A Couple of Cooks. It is super yummy and really easy to make. 


Ingredients:
For the gnocchi
  • 2 Large sweet potatoes 
  • 1 1/2 to 2 cups gluten free all purpose flour
  • 1 egg
  • 1/2 Parmesan cheese
For the sauce:
  • Oregano
  • Olive Oil
  • Salt
First cook the sweet potatoes. You can either do this in the microwave or the oven. The microwave is a lot faster, but don't forget to poke them! Once they are done, let them cool for a few minutes and then scoop out the inside of the potatoes into a bowl. Mash the potatoes until they are smooth. Add the egg, cheese,  1 1/2 cups of the flour and salt. Mix and then knead. Gradually add flour until the dough is no longer sticky. This may take the full 1/2 cup of flour you have left. 

Divide the dough into four part and, using your hands, roll out each piece into a long skinny roll. Cut the roll into small parts and if you would like, press with a fork to make an indent. Bring a large pot of water to boil and boil the gnocchi until they float. In a skillet, heat enough oil to cover the bottom. Transfer the gnocchi to the skillet and sprinkle with oregano and salt. Saute until golden brown. Serve hot and Enjoy!

Notes: This made quite a bit. We ended up freezing half of the dough to make later.
