Mini Strawberry Cheesecakes

Here is a fun, very quick, recipe that is sure to be a hit. These little treats are great for when you are in the mood for some cheesecake but don't want to go through the hassle of making/buying on and when you want the taste of cheesecake without all the calories.


Ingredients

  • 2 quarts of strawberries
  • 8 oz 1/3 less fat cream cheese
  • 1/3 cup powdered sugar
  • 1/2 tsp vanilla
  • Gluten free graham crackers
Wash the strawberries and cut the stems off so that you have a nice cone shape hole in the strawberry. Set aside on a paper towel to dry. Soften the cream cheese just enough so that is easily stirred. Add the powdered sugar and vanilla and stir until it is completely mixed. Add the mixture to a sandwich size zip lock bag, cut the tip off one of the bottom corners, and use this to squeeze the mixture into the strawberries. Stand upright in a sealable container and refrigerate for a least 1 hour. In another baggy, put one graham cracker, seal the bag and using a hammer (or other heavy item) crush the cracker until it is a fine powder. When you are ready to serve the strawberries, sprinkle the graham cracker over the top and enjoy!

Note: Our friend's 4 year old couldn't get enough of these. They are great because they are not that big and easy for small hands to handle (and to snatch when no one is looking). Can you guess which 4 she picked out for herself?
