Apple Cider Muffins

Here is a great fall treat! These muffins are nice and dense and really have a great fall flavor. They are perfect for breakfast or dessert!


Ingredients:
  • 1 cup sugar
  • 1 cup brown sugar
  • 3/4 cup applesauce
  • 3 large eggs
  • 1 1/4 cup buckwheat flour
  • 1 cup soy flour
  • 1 1/2 tsp baking soda
  • 1 tsp salt
  • 1 tsp cinnamon
  • 1 cup apple cider
  • 3/4 cup low fat sour cream or plain yogurt
  • 1 1/2 teaspoon vanilla extract
Topping:
  • 2 tbsp of cold butter
  • 1/4 cup Gluten free flour
  • 1/4 cup brown sugar
Preheat oven to 350 degrees. Grease two muffin tins. In one bowl, combine the sugars, applesauce and eggs. In a second bowl, combine your dry ingredients, and in a third bowl, combine the apple cider, sour cream and vanilla. In batches, combine the dry ingredients with the wet until all are mixed. 

In another bowl, combine the topping ingredients until crumbly

Fill the muffin tins 3/4 of the way full. Sprinkle some of the topping on each muffin and then back for 25-30 min. Take out of the oven and let the muffins cool on a wire rack. These are best when they are cold. Enjoy!
