Last week we tried:
Pinch of Yum's Shrimp and Avocado Salad: I didn't get a pic since I ate it so fast it was so good! Miso paste was a little hard to hunt down, but I found it at our local health food store. I used kale from our garden as the base and let it sit in the dressing for about a half an hour to break it down a bit. I used lemon instead of lime juice and topped with candied walnuts. The only thing I think it was missing was some cherry tomatoes. Definitely a win.
Half Baked Harvest's Buffalo Chicken Quinoa Salad:
My version
I made a half recipe of this since we didn't have enough quinoa and it was the perfect amount for Nate and me. The prep time listed is a little short and I spent closer to a half a hour chopping, shredding and dicing, but I used all veggies from our garden so nothing was pre-cut or shredded. Instead of cabbage I used kale but other than that I followed the recipe to a tee. I love anything buffalo chicken and this is no exception. Nate didn't think I made enough so I take that as a thumbs up from him as well.
